I made some soup today and thought I would share my process. I always keep the ham bone whenever I smoke a ham for the holidays. With Easter around the corner I thought I should make room for the next one. I usually simmer the bones for about an hour adding whatever spices or seasonings I want and then pull it out to get as much of the meat off of it as I can. Then put it back in and simmer it in for a couple of hours or so. I have found this keeps the meat from getting overcooked and dry while getting as much of the flavor from the bones. Next is to cool it down, usually in an ice bath, bowl surrounded by ice in a larger bowl. Put this in refrigerator for the next day. After the broth has cooled the fat is floating on top and easy to skim off. I usually use a couple tablespoons of it in the pan to sauté some onions instead of butter or oil, more flavor. De glaze the pan with the broth and then add the meat and beans that have been soaked overnight. Simmer to desired tenderness.

Thanks, it turned out pretty good. We will be having it for dinner tonight. Maybe a grilled cheese to go with it.

15 different beans? That’s a lot of beans.🤣

We love ham a bean soup, I like to use navy beans...

My wife just made a 15 bean and ham soup this past Sunday.
My wife makes that, too...

Look's damn good!!!

I just made a batch last week, I always us 50/50% Butter beans and Cannellini beans in mine. I love the creamy texture of the Cannellini beans and the flavor of the Butter beans.
This time I used canned Cannellini beans that I got for 60 cents a can on an Amazon special. I bought two 24 can flats at that price. They are great for soups, stews, cold bean salads, and many other things. If you haven't tried them, you need to!!!

Thanks to all that replied. The wife was very happy with it so it goes down as a win for me. I can put up with a few butter beans in my Brunswick stew but that's about it. We had to shell them when I was a kid and haven't liked them since. I am not sure about the Cannellini beans maybe I will pick up a can or two next time I'm at the grocery store.
