Habanero Sake Wings v2.0 and Ba'Corn Cheese

Another L O N G post... Thanks ahead of time for taking the time to read.

Started with 2 cups of Sake in a jar and 3 or 4 sliced habaneros with seeds and ribs and all. My goal was to flavor the Sake and add a little spice.

Soaked the chicken wings for about 5 hours and then drained them and patted them dry with paper towels. Fresh ground Quad Colored Peppercorns and Black Hawaiian Finishing Salt.

Mother Nature prevented me from cooking outside today so the wings were cooked in the air fryer at 400F for 20 minutes and flipped once.

While the wings were cooking I started on the Ba'Corn Cheese . I saw this on Diners Drive Ins and Dives and found the recipe on the Food Network.

Here's the ingredients - this goes fast so prep everything ahead of time!

2 tablespoons unsalted butter

2 strips bacon, chopped

1/2 jalapeno, seeded and minced

2 cups canned sweet corn

Kosher salt and freshly ground black pepper

1 clove garlic, minced

2 scallions, thinly sliced

2 tablespoons condensed milk

2 tablespoons mayonnaise

1/2 cup mozzarella cheese

Started by turning on the broiler inside the oven and putting an empty 6 inch cast iron pan under the broiler to preheat it.

Put 2 Tablespoons of butter in a pan on the stove top on High and added two strips of bacon that had been chopped up.

Once the bacon is crispy (less than 1 minute because the pan is on HIGH) the chopped up Jalapeño and Habanero Sake Wings v2.0 and Ba'Corn Cheese can of corn is added and seasoned with Salt and Pepper and cooked until the corn starts to char up.

Add the sliced scallions and chopped up garlic.

Once the corn is charring 2 Tablespoons of Mayonnaise and 2 Tablespoons of Condensed Milk is added along with 1/4 cup of cheese.

Once the cheese has melted, CAREFULLY remove the preheated cast iron pan from the oven and dump mixture from stove top pan into the cast iron pan.

Top with remaining cheese and put back under the broiler for a minute until the cheese is melted in.

Ironically, after I dished some up for dinner I put the pan back inside the oven, with the broiler off of course, and the residual heat crisped up the cheese a bit more and the second helping I had tasted a lot better!

So.. the verdicts

Sake Wings v2.0 - still not the heat level I was seeking... almost a sweet flavor which is weird and confuses me.

Ba'Corn Cheese - fantastic dish.. the first time I made it .. I modified it to cook on the grill.. this time I followed the directions.

Definitely too much butter... the only advantage is that all the butter keeps it from sticking to the cast iron.. but you can see it all in the last photo.
