I can never be accused of wasting precious Salmon meat. Yesterday I grilled a collected group of Salmon Belly pieces that I cut off when processing our fish into filets, etc. With the belly having so much fat, the meat nearby is extremely delicious. I also am the official bone scraper at home, so when the wife is done fileting the fish, I scrape the skeleton clean with a small tea spoon, of all meat that was left behind. Once done, I use the meat in a Salmon Patty recipe.

Yes, the 2nd batch of patties on the left started to get a little well done, for I was too busy taking pictures.... LOL. Also as you can see that some of the belly pieces on the right are of a more red or dark coloring. This was because I Marinated the belly pieces using two different recipes. Always experimenting

    Kudos to you!

Especially with FRESH salmon?  Too many are tempted to discard the belly.

The belly is actually great meat, but the salmon has to be fresh.

    Good luck and good smoking.
