Having been on the get healthy focus since July 2010 we have lost a little over 30 pounds each. The biggest reason for failure of most weight loss programs is they make you eat food that tastes like crap. So I have been on a mission to lower the salt, lower the fat and keep the smoke and sauce that makes grilled and smoked barbeque so damn good.
This is one of the things I have been doing to help. We have some type of fish once or twice a week.
This is my low fat grilled halibut with peach salsa.
The marinade is 1/4 cup orange juice, 1 tbsp lime juice, 1 Tbsp spoon lime zest, 1 glove garlic, salt, pepper, 1 Tbsp brown sugar, mix it, save just under a 1/4 cup for basting, put the rest in a plastic ziploc with the halibut and let it sit for an hour or so. (in cooler)
Then to the sides, long grain rice and sweet white and yellow corn.
While that is cooking you can whip up the peach salsa. 1/4 cup diced onion, 1/3 cup diced peaches, juice of one lime, 1/4 cup minced cilantro, 2 Tbsp orange juice, salt, fold it together and let it stand while you grill the fish.
Then plate it up and eat!!!!
