Grillah From Boston Area

I cook on a 15 year old webber kettle that was given to me, and I use charcoal.

I also love to take pics, so I have pics of some of my masterpieces. I dont subscribe to a lot of snobbery about "OHHH you cant use THAT!"

I just make up whatever and hope it tastes good. I am very open to tips though, since I just pull most everything out of my *** and make it up as i go.

The BBQ bible book by Steve Rachieln got me started on the whole somkin' thing & he uses the Weber Kettle quite a bit. I see you have it mastered. Keep up the good work

Nice picks Grillah! i'm from southern NH but i just moved to Florida. Lots of smoking goin on down here! Nice shots of the salmon, I was gonna try that this weekend, any suggestions?

My girl likes to marinate salmon in a mix of soy sauce, brown sugar , and spices, but we got that salmon last minute, so no marinating time

When she showed up with it, and I saw what and AMAZING cut it was, I just KNEW the only thing for a piece of meat that epic was

-Sea Salt
-Fresh ground black pepper
-Olive oil


And thats it!

Honestly, it was the best piece of fish I have ever had in my life.

I have really ruined myself, even if we go out to a nice restaurant, I always think "Meh, that was okay, I could have done better...."

I probably shouldnt have posted so much at first, but I was so exicted!

I post on a lot of offtopic message boards (I was actually directed here from www.nonewbs.com)

but when I post stuff there, I get a lot of "YUM" and "looks good" replies. I look forward to some good tips here!

what did you use for wood chips?

Well the haddock was cooked on oak planks, which helped smoke the meat

The ribs were done with some "Jack Daniels oak barrell" chips

Im not that goodat smoking, I mostly do grilling

I started smoking using a kettle style grill, it's a lot of work i think but the taste is still there. Will have to try your salmon this saturday by the pool. Just got some Alder wood from Washington State, should make a good salmon great! nice photos!

Wow that was magic with that grill. I a have masterbuilt and used a pellet smoker before and that actually looks just like a pro cooked it. I grilled a few lobstah. Good, only of you foil it or else it becomes sooty and the meat ends up looking grey. The grill has to be cranked up and you have to flip them a few times. Slow cooking is not for lobster. I owned a lobster boat back on the north shore. I am now in vegas getting slowly smoked by the 110+ weather
