Hello everyone! I've been reading the forums for quite some time trying to absorb as much information as I could before purchasing my first smoker. I've finally decided to purchase a Smokin' It #1 and the order will be placed in a week or so. I decided on this model because I live up in the northeast and I'm on a hill where it is quite windy. I didn't know if a propane or wood/charcoal smoker would work where I am because of the wind, and I wanted something heavily insulated so I could smoke year round. The temps around here range from single digits in the winter to around 100 in the summer, so that was a big factor.
I'm looking mostly to smoke ribs/brisket/pork, but my wife changed her tune on the whole thing when I said "Well, people make lox in their smokers" so I've got to learn to cold smoke too. Right now, I don't know if I should get the cold plate from Smokin It or an AMNPS. I know the forum is very heavily AMNPS biased, so I'm leaning that way right now. I figure if a product can elicit that kind of response from that many people, it's got to be good. I'd be interested to hear from folks that use the cold smoke plate though.
I've already gotten the 5-day eCourse and enjoyed it very much. I've filed it away to make sure I can access it whenever necessary.
Anyway, that's it I guess. I'll be starting with the stupid n00b questions soon :)
