I am so excited to have friends who can be excited about the same thing as I am, preserving and enjoying meat. Don't think I would make a very good vegetarian, LOL. I am located in the Eastern Panhandle of West Virginia in part of the state called the Potomac Highlands. We are between 1500-3000 ft above sea level and we love our mountains. Recently, elk have been introduced to our state and we hope soon they will migrate to our neck of the woods.  I smoke (right now) on a retrofitted Brinkman Grill N' Smoke that my husband fitted with a gas burner underneath but he has build me a large smoker to use in the future when he works the bugs out, I will post pics. We all hunt and I am looking forward to Venison Summer Sausage and learning how to smoke venison. I have successfully smoked ribs, pork butt and a turkey with pretty good results so far. Well, that's enough about me, Happy Smokin' Everyone!!
