I guess you could say I'm a Newbie. I've smoked mostly ribs (Beef, Baby Backs and Country) on my Weber Kettle and Genesis gasser, using home made foil packets and smoker boxes. I'm now graduating and getting a WSM 18.5" smoker. The knowledge from all the members, here, is amazing and I'm sure I will learn a great deal.       Thanks,
