My name is Dale and I reside in Laredo, TX. I was raised in Rhode Island and have lived/travelled throughout most of the United States, Hawaii, and Northeast/Southeast/Southwest Asia and have developed a great appreciation of the food from these areas over the years. Here in South Texas "burning meat" is a large part of the culture and mesquite is a medium that transcends all languages, cultures, and socio-economic status. This past December I began dabbling in sausage making and am still learning the ropes. I have perfected a few sausage recipes to my liking and have been experimenting with a few new ones. I look forward to sharing them as well as learning from the wealth of experience on this forum.
