  1. Hello Everyone!

My name is Dan and I live in Wooster, Ohio. I recently purchased a couple year old, barely used 18" Weber Smokey Mountain Smoker. I had always been intrigued by smoking meats and for $40 I decided to give it a try. I have only smoked a beef chuck roast so far. It turned out very tasty but a little dry. Could this be from some temperature issues I was having? The flavor was still amazing as I told my wife I may not want roast any other way. I will post a before and after picture of the roast. I look forward to having a plethora of information available.

    Thanks,

    Dan

Dan welcome to SMF glad you joined us, Congrats on the WSM that was a great price. Next time try taking the chuckie to 160 then wrap it in aluminum foil and seal it tight and back into the smoker till finished and see what you think it won't be dry.

    You stole that smoker! $40?

Btw, HD and lowes are having their Memorial Day sale on charcoal! You might want to stock up... ;)

  5. Thanks for the info guys. I will try that on my next chuck roast. Sounds like I need to get to Lowe's this weekend. I look forward to getting any tips I can.
