I have worn out a few brinkman electric smokers over the years, But we just came home with a Masterbuilt propane powered smoker. While I currently live in central florida I will be moving back to the mountains of NC in the next few years. I would like to be as self sufficient as possible, and I want to add curing meats to my other food preservation skills. I admit I am also a bit of a foodie, and just enjoy the process of making things from scratch. Besides canning, dehydrating and soon freeze drying my own food. I also do crazy things like process raw fleeces and dye, spin and knit or weave items. I am hoping for a few acres when we get back to the mountains where I can have some fiber and meat animals. Right now I am on a desprate search for curing salt here in central florida, I have 5 lbs of pork belly that needs to be bacon. I am also interested in learning to cure ham, sausages, make my own pastrami and corned beef etc etc.
