Hey all, I've been a lurking member for a little while now and finally decided I should introduce myself. I'm a Texas native, living just outside of Baltimore, Maryland. I was looking for a way to smoke meats on the balcony of my condo and decided an electric smokehouse was just what I needed to comply with local fire ordinance. So far, I've used my 30" MES to smoke brisket, ribs, whole chickens and cheese.
