Hi, Just signed up and thought I would say hello. I'm from London UK and I've dabbled a little in smoking and have been doing mackerel with excellent results. Being the budget kind of guy, I made my own gas BBQ top hot smoker. I got the box from some guy who was unloading it at the local tip. It's in great condition. Inside I used two skewers on top of which sits a grill. Works really well. The next step is to drill a hole in the top and fix a thermometer in it, so I know the internal temp. Next I want to smoke some chicken breast, and have been looking at tips and recipies to get started. I anticipate getting some great advice from the seasoned pros on here and eventually also helping out others. Cheers.
