Howdy all had my first smoke just the other week. I used my ECB as it is called here but can't complain it was 7 bucks at a garage sale and it worked pretty well. I did a beef roast that I put some rub on Texas Grub Rub I think it was, along with it I did a deer roast wrapped in bacon, and some fresh hot italian sausage. Took about 6 hours for the roasts and 3-4 for the sausage. I had a little bit of a hard time keeping the temp up but it worked out. Everybody loved it so it was a good smoke. Let me know what ya think, always wanting to hear pointers from the experts. Gonna try some fatties or I seen some shrimp stuffed poppers on here this morning both look great.   Jason

THE DEER ROAST WAS 165 DEGREES WHEN I TOOK IT OUT THE SAME AS BEEF. I WOULD LIKE IT MAYBE A LITTLE LESS DONE I LIKE IT A LITTLE MORE PINKISH, BUT VERY MOIST AND TENDER. I JUST HAD IT WRAPPED IN THE BACON. THE BEEF ROAST I INJECTED WITH A ROASTED GARLIC AND BUTTER MARINATED FROM THE STORE THEN COATED WITH MUSTARD AND SOME TEXAS GRUB RUB. I'VE HEARD RAVE REVIEWS OF JEFF RIB RUB I GOTTA GET SOME OF THAT MADE UP.
 
Can't beat that for $7...JJ
