I made Greecian chicken kabobs for dinner tonight.

Marinaded chicken breast, yellow peppers, green peppers, and onions. 24hr marinade.

Marinade consists of olive oil, lemon juice, apple cider vinegar, water, Greek seasoning.

Greek pita bread, rice, and a small side salad with Greek dressing and feta cheese.

1 1/2 pounds boneless skinless chicken breasts, cut into approximately 1 inch cubes

• 3 tablespoons fresh lemon juice

• 1 tablespoon red wine vinegar

DemonPit DemonPit , consider this a tribute cook. Your meal looked so amazing, and I've not made Greek kebabs of any kind in far too long, so yesterday I set out to clone your meal.

I used a similar marinade to what you described, but also added a bit of Greek yogurt, and reduced the marinade time to 4 hours, since there was a lot of acid from the lemon juice and vinegar. I added a bit of Greek seasoning to the rice, and like you I lightly grilled the pita, served with a Greek salad and I also set out some store-bought hummus.

Thanks for the inspiration! I can't wait for tonight's leftovers.
