I do like smoked wings. I have been coating them with veggie oil and then putting them in a zip lock with the rub. Last couple of tries tasted pretty greasy to me. Is it better to skip the oil and just put the rub on the wings?
There seem to be some good binders that I have used. Mustard is not so bad on pork. Butter seems to work well on turkey breast and thick woosty sauce on beef. Veggie oil? That seems not to work so well for me on wings.
I too use nothing before I rub. I don't like the"Wang" Mustard gives Pork - that's just me - and using gloves, I can get the rub under skin easier (where it get the job done better , and getting into cracks and crevecies of Muscle meat. They seem to come out alright:
