Greasy Armadillo eggs

I made these once before and thought they were too greasy. I used Tennessee Pride breakfast sausage. I cut the peppers in half and stuffed them with the cream cheese and cheddar mixture then covered them in sausage. The sausage was really greasy. Is there something I am doing wrong or need to do different?
 
Cook the sausage and drain 1st. Then use the cooked sausage in the stuffing mixture.

I misread your post, so the sausage goes on the outside? I guess pre-cooking won’t work. Sorry.
 
I would think since I did them on the smoker that they were on a rack. To be honest it has been awhile since I did them. I have seen them pop up on social media sites I follow lately and was thinking about giving them a try again. I was getting the urge to try again, but just remember them being greasy. I will probably just stick to ABT this weekend.
 
Armadillo Eggs

1 lb grated Monterey Jack
1/2 lb hot pork sausage
1 1/2 cups biscuit mix
1 pkg Shake & Bake for pork
15 or so medieum size canned jalapenos
2 eggs, beaten

Slit and seed peppers and stuff with half the cheese. Mix remaining cheese, sausage and biscuit mix to make a stiff dough. Pinch off a bit of dough and flatten to a pancake, place stuffed pepper in center and wrap it in the dough. Roll to egg shape in hands sealing as much as possible. Dip in Shake & Bake then in egg then in Shake & Bake again. Bake at 300 degrees for 20 to 25minutes.
