Long time time griller (gas and charcoal), short time small-batch smoker (15 years±), first time builder.

I have been using a small vertical smoker for about 15 years, the kind with the drip pan near the bottom above the fire, and have been fairly happy with certain meats at certain temps, but not great for longer smokes or large batches. So I've been looking at upgrading for a while and researching all of the options out there, including the nice retail units with bluetooth and meat probes etc etc

BUT I started seeing some of these home builds, and figured I might as well give it a shot. Found a 275 gallon fuel tank and picked it up yesterday, so I'll be designing my build around that.

I look forward to researching all of the build options on here, and I'm sure I'll have a few questions once I really get into the details.
