Hello everyone, my name is Mark and am relatively new to smoking. I got an El Cheapo Brinkmann for fathers day last year and loved it after making the necessary modifications. I quickly outgrew it and for Christmas this past year I got a Masterbuilt Dual Fuel. This is going to be even more fun. I smoked a prime rib for Christmas and after 4.5 hours and an internal temperature of 120 degrees, it was ready for consumption. Everyone loved it. I did have a little trouble controlling the temperature as it fluctuated from 200-300 going high usually after I added more wood chips and chunks. I have just bought a Maverick dual probe thermometer and Jeff's Smoking Meat Cookbook and cant wait to get into it.
