I always inject butts and briskets and brine chicken and I think doing that helps keep them moist. I only use a pan to catch the juices to use when or if I wrap later on. 

I'm very new to this, so you inject them with just water or something with spices in it?

For your first smoke, do a Fatty or a Pork Shoulder. Something with a bit of ... Wait for it.... Uuummmmm Pork Fat!!!!!!

That will re-enforce any seasoning you have done.

After reading more I decided to smoke a rack of spare ribs.

Its done.......This is my first UDS. I used Ford Blue engine paint that's rated for 500f. It was on sale today at Advanced discount auto parts for $5 a can.

Note to self always paint the drum before you use it.

Why do you wish you had painted first? Also, how do you like that handle? Does it get too hot to use without a mitt?

I got oil and what not all over the drum. The handle does get hot. May switch to something else
