It's at 158 IT right now.. ECB is 243. .... I did 86 the skin.. but hope the crust is good. Didn't want to worry about skin blocking flavor or being stuff.. Lol..

Potato salad has relish .. mustard.. mayo..onion..green pepper.. celery.. salt&pepper.

Once this is at 165 IT , I'm gonna wrap this and put some more butter in the foil .. put it in the cooler an hour before I slice it..
 
I haven't tried yet in cold weather.. But I can adjust the charcoal pan up or down in 6 different levels.. so I shall see this winter .. lol
 
I am just catching up from the weekend.

That looks great. I need to try cutting the breasts off like this.
