I am in the middle of construction for a new patio for my grills. So all the wsm’s and kamodos are in excess-able
But I have this beauty of a 12 lb Picnic ready to go . Humm so let’s go old school and use a 22 weber set up for two zones. So out comes the ssp

Ready to go .. 250 cherry wood Apple juice every hour . Rotated 45 every hour

Finished with Carolina Vinegar Sauce
  • 2 cups apple cider vinegar
  • 4 tablespoons dark brown sugar
  • 1 tablespoon ketchup
  • ½ tsp cayenne pepper
  • 1 teaspoon of red pepper flakes
  • 1 teaspoon of ground pepper
  • 1 teaspoon salt
Instructions

  • Place all ingredients in a pan.
  • Cook on stove top at Medium heat.
  • Bring to a boil.
  • Whisk together until sugar and salt are completely dissolved. Remove from heat.
  • Cool to room temperature.
  • Pour sauce into a jar or bottle. For best results, refrigerate one day before serving.
  • Shake well before servi
 
Sign me up! Love that sauce too, or a close version of it. Always make some with Pulled Pork. Good to show the "old" weber some love. Mine look at me with bated breath for another hunk o' meat...
