Goat meat

We love goat, which can be prepared in many different forms. While many compare it to lamb, I find goat meat's flavor more intense, and in a good way .

Throughout much of the world, goat meat is considered the most popular meat, but not so in the US. More so in Asia, Africa, the Caribbean, and the Middle East.

In an prior post on the subject, "Touch&Tone" mentioned a number of ways goat meat, all of which I've done in the past, and then some. Most recently, I prepared a goat curry based on a recipe given to me by a Jamaican chef. I've attached the recipe below.

I've had goat twice didn't care for it either time. I've never had lamb so no idea if it tastes the same or not. I also have no idea how old the goats were either time I ate it
 
In my experience Lamb can be very good. I have some in the fridge now ready to cook in the next day or two.

I have not been so fond of goat. The couple times I have tried it were made by Filipinos for various parties and it was in a blood stew I guess. The blood didn't gross me out that much but the meat was full of too much fat and it made me gag as I tried to eat it. That turned me off from trying it again.

Goat and lamb are similar in that the closer they get to 1 + year old the meat takes on a much stronger” game” taste. This change happens with kid goats a little faster or earlier than lamb in my experience. We used to butcher lamb 9 months to a year, but goat was 6 months to 9 months old.

In either case once they turn gamy you either like it or you don’t. My father preferred older animals but me not so much. I like those animals 9 months to a year for the freezer, if that’s not possible I would instead send those to market.

My experience was the opposite. The few times I've had it was at a party where it was smoked. What I had was near devoid of fat, like deer.
If fact I've heard several tales from years ago that poached deer were often used for area goat roasts since they are similar in size and texture.
I know the goats I mentioned eating were really goats as I saw the guy harvest them.
Maybe goats are like cattle and can be fattened for slaughter?
