Getting ready for the Christmas turkey smoke. What do you do with there giblets. I usually throw them to the dog but thinking maybe I'll smoke them too. Any tips?

YUP What he said with thyme, rosemary black peppercorn, 1/2 stick of butter and a head of garlic. Use the stock for anything that needs stock. Adding water last after building caramelization.Boil them with onion and celery. Then chop them fine and make gravy with them for your taters... mmmm. Mmmmm
