Getting ready for the Christmas turkey smoke. What do you do with there giblets. I usually throw them to the dog but thinking maybe I'll smoke them too. Any tips?
 
Put in some foil making a bowl out of it smoke for a couple of hours then fold up the top for 1 more hour. Make jiblet gravy with them and let the dogs lick the plate when your done lol

I am in the same Boat..making Jeff's Maple Turkey and JJ's Gravy.. After a few hours of Smoke I think I will add then to the gravy...:) yum

Maple Brine'n as we speak....

Well.... I brined them with my maple bbq turkey brine. Then I injected them with butter, brown sugar, and spiced rum. Then forgot to put them on the smoker. :(

Boil them with onion and celery. Then chop them fine and make gravy with them for your taters... mmmm. Mmmmm
YUP What he said with thyme, rosemary black peppercorn, 1/2 stick of butter and a head of garlic. Use the stock for anything that needs stock. Adding water last after building caramelization.
