6 pound butt and 2 racks of small baby backs. Smoking with plum, cut the tree down last April. Cut these pieces thin. Hoping the butt shoulder will take 6-7 hours. It's 6 pounds. 1 3/4 mark here. Smoking at 250. This wood is very well seasoned, very nice to smoke with

My 8 pounder the other day took 10 hours at 275* but that that was with wind and rain. Yours is thinner and not as heavy so I wouldn't be surprised if you made on time.

Going on about 40 minutes before tossing a new piece or 2 in. I was going to make these into tables but didn't seal the ends. I've got a real hard oak road I tried to crack but nothing, it's the last piece standing, a tuff one. Might use it for a table, much bigger too about 22-23"

Ribs were done little after 3 hours. Shoulder is at 162 5 hours in
 
Looking good,Been there on the shoulders before,I allow 1 hr per pound and can put in a cooler to hold if done early ,can ramp up heat but can make some hard bark
 
Ribs look really good, how'd the shoulder turn out?

The butt went 9 hours. It was a pretty lean looking butt. They all were they had there at winco, I go to Walmart for the ribs and they had the butt there this time.
Took the butt to 206-208
