Had some time to kill today and nothing planned for an outdoor cook. I made 10 lbs. of German style bratwurst patties yesterday so decided to roll with the German theme for tonight's supper. With my wife and I being on a keto eating style for over a year we have to get creative to keep it interesting. Tonight its brat sandwiches on swiss and rye chaffles with a side of German Fauxtato salad :)

First up I decided to make the German Fauxtato salad.
All ingredients.jpg

Here are the ingredients for the dish. Had to use some store bought bacon since I used the last of mine last week.
daikon sliced.jpg

Two large daikon radishes sliced using a mandolin slicer. These will boil in some saltwater until fork tender. About 15 - 20 minutes. Believe it or not this removes the radish taste and leaves you with a somewhat bland flavor with a similar to potato texture. It will then take on the flavors of whatever you use it in as a potato sub.
other ingredients measured.jpg

One medium onion diced, 2/3 cup white vinegar, 2 TBSP dijon mustard, 1 tspn kosher salt, 1 cup Splenda and lastly some chives diced for garnish
bacon and onions cooking.jpg

One lbs of bacon cooked partially and cut up. 1/2 cup of bacon grease retained in pan with onions added to saute
sauce cooking.jpg

Once the onions are translucent add the vinegar, dijon mustard, salt and Splenda and simmer a bit

done in bowl.jpg

Sauce mixed into the Fauxtatos :) , hit with a little chive garnish

chaffle ingredients.jpg

Now its time to make the chaffles that will serve as buns for our brat patties. 1 cup shredded swiss cheese, two eggs, two tspn caraway seed, 1/2 tspn baking powder and a pinch of pink Himalayan salt.
batter2.jpg

Chaffle "batter" all mixed up. Seems crazy but makes nice fluffy waffles. They call them chaffles because so much of its cheese. Seems to be the craze in the keto community now.

Finished swiss rye chaffles. This is from two batches, would have been one more but the practices one didnt survive whole lol.

frying brats.jpg
Two of my homeade brat patties frying with a blend of swiss and mozzarella melting on top. I ended up doing 10 lbs. of these patties following a recipe posted by @Polka in this thread and it was excellent. https://www.smokingmeatforums.com/threads/bratwurst-recipe-and-seasonings.276580/

Double decker , two 1/4 lbs brat patties with melted cheese and a dill garlic sauerkraut.

Here is a plate for my wife. Double decker brat with a side of the German Fauxtato Salad on a bed of wilted garlic spinach.

I make plenty of these keto conversions that the world never sees lol. This one will be added to the rotation. This is a meal that guests could eat and never know it had been modified to fit a keto diet. Thanks for looking!

I will have to start putting the text above the pics. Not sure why I put them below :)

You had me at swiss and rye chaffles.
Thanks for posting the ingredients.
My wife is 100% Keto due to being a type 2 diabetic and counts carbs.
So this is someting we can rotate in esp for reubens.

not sure what a keto diet is but that meal looks great.
Vert low carb diet so no breads, potatoes, pasta, sugar etc. I’ve lost about 90 lbs I’m the last 16 months but have about 50 more to go lol. The diet fits my love of meat and cheese well. We have learned to make countless subs for bread, desserts and even pizza.

I finally broke down and bought the mini waffle maker today. I’ve been seeing so many chaffles on some keto Facebook groups I frequent. The texture is amazingly fluffy. Can do many kinds savory or dessert. Pic above was posted on one of the groups.

LOL on the mini waffle maker. We have two and the pancake maker.
Thanks for posting the above chaffle recipes too, very much appreciated.

Keto is certainly not a rapid weight loss regimen.
My wife has lost 13 lbs since starting this past July.
So it is a slow and steady process.
Of course, we are both "older" and not as active.
So I am sure younger and more active people would experience faster results.

Looks great not into diets. Congrats on your achievement

Looks great!

I haven't gone full Keto, but I've been reducing carbs and exercising more. Lost 25 lbs since the beginning of the year. Looking to shed 10 more.

I'm going to have to try that German Fauxtato salad.

Its pretty tasty. Next time I may bump the dijon mustard up another tablespoon.

I've never used Splenda. Will I use the same amount of sugar? (since I'm not Keto)
Time to buy a mandoline.

That looks really good!! Especially that fauxtato salad, I would love that.

I tried the Keto diet but my thirst for beer gets in the way. Awesome job with the weight loss and being disciplined.

@jcam222 Are all of these done on the waffle maker?
Thanks Richie
