Had some time to kill today and nothing planned for an outdoor cook. I made 10 lbs. of German style bratwurst patties yesterday so decided to roll with the German theme for tonight's supper. With my wife and I being on a keto eating style for over a year we have to get creative to keep it interesting. Tonight its brat sandwiches on swiss and rye chaffles with a side of German Fauxtato salad :)
First up I decided to make the German Fauxtato salad.
Here are the ingredients for the dish. Had to use some store bought bacon since I used the last of mine last week.
Two large daikon radishes sliced using a mandolin slicer. These will boil in some saltwater until fork tender. About 15 - 20 minutes. Believe it or not this removes the radish taste and leaves you with a somewhat bland flavor with a similar to potato texture. It will then take on the flavors of whatever you use it in as a potato sub.
One medium onion diced, 2/3 cup white vinegar, 2 TBSP dijon mustard, 1 tspn kosher salt, 1 cup Splenda and lastly some chives diced for garnish
One lbs of bacon cooked partially and cut up. 1/2 cup of bacon grease retained in pan with onions added to saute
Once the onions are translucent add the vinegar, dijon mustard, salt and Splenda and simmer a bit
Sauce mixed into the Fauxtatos :) , hit with a little chive garnish
Now its time to make the chaffles that will serve as buns for our brat patties. 1 cup shredded swiss cheese, two eggs, two tspn caraway seed, 1/2 tspn baking powder and a pinch of pink Himalayan salt.
Chaffle "batter" all mixed up. Seems crazy but makes nice fluffy waffles. They call them chaffles because so much of its cheese. Seems to be the craze in the keto community now.
Finished swiss rye chaffles. This is from two batches, would have been one more but the practices one didnt survive whole lol.

Double decker , two 1/4 lbs brat patties with melted cheese and a dill garlic sauerkraut.
Here is a plate for my wife. Double decker brat with a side of the German Fauxtato Salad on a bed of wilted garlic spinach.
I make plenty of these keto conversions that the world never sees lol. This one will be added to the rotation. This is a meal that guests could eat and never know it had been modified to fit a keto diet. Thanks for looking!
