G'day all, in the past i have been sucessful with bacon and ham on a bullet smoker, plus smoked chicken, oysters, and fish. Now have a pellet grill and looking into bacon again and maybe some speck and all going well . I've purchased and waiting delivery of a small wine fridge with fan and water tank for humidity hoping this will help in the future. Will be seasoning my first bacon tomorrow and some small chunky rashes for speck will follow up with some photos, wish me luck.
cheers
Joe
