Garlic turning blue in pickled okra???

I pickled a bunch of okra using 50/50 vinegar and water, garlic cloves, kosher salt, dill, whole black pepper and habenero pepper. Within an hour the  the garlic started turning blue. Anybody know why?

General consensus.... the sulfur in the garlic... immature garlic... metals in the water.... and/or iodized salt.... take your pick....
 
Everything I read says they are still good to eat..... whatever turns them blue, was there anyway.... The I read where blue/green garlic are a delicacy in Japan or somewhere.... They try to get the blue/green color....
 
I never had an issue with eating it. In fact it is very tasty. Since I am the one who made it I knew their was nothing other than what I had put in it.

Delicacy??? HMMMM! Do you have the address in Japan where I can send pictures? If it brings big money I will cut you in for 40%.
