Today is a day of appetizers for the NFL playoffs at T4.

One item was to be pork shots. I mixed up some rub and cream cheese. Cut up some local sausage, and then... The bacon I got was complete junk. It was supposed to be thick cut but I'm pretty sure I couuld have read the newspaper through it... I couldn't get it to wrap around the sausage at all.

Getting more and frustrated, I said screw it and chopped up the bacon pretty course and cut the sausage slices in half. I threw them in a Weber pan and onto the kettle they went for an hour at 250°.

When that was done I brought them back in the house, mixed them with the cream cheese/rub mixture, then spooned them into a foil pan. I threw about a cup of shredded cheddar over the top and gave it another dose of rub.

From there it went back on the grill for another hour at 250°.

The verdict... It's an excellent dip! Creamy, spicy, full of bacon and sausage in every bite. My only minor complaint is that I wish I had better chips. I keep blowing out the thin tortilla chips when I dip.

Next off the grill is some smoked crab dip!

I have had that same problem with crappy bacon. VERY frustrating. I found it helps to have the bacon very cold before trying to roll it around the sausage.
