Yup they are good.
Used to catch em when i lived in the S, Calif desert. Get a big mojave green...yum yum.
 
My Grandmother would either use a salt water soak, or a buttermilk soak, then braise it, let it cool, and fry it. It's very good. Almost reminded me of frog legs.
 
I have usually run across them camping and just use what we have.
Skin.
Cut into 4" lengths.
Roll in egg then corn meal.
Fry in butter.

Its real good eating.

Haven't had it for at least 40 years, when I swapped a Buddy of mine at Bethlehem Steel, on Lunch Break. He gave me some Rattlesnake & I gave him some Broiled Shad Roe.
Both Awesome!!

I tried it when I was in AZ. I figured I had to try it. It tasted good, but if I remember right it had kind of a stringy texture.
 
Had it back in 1981 out in Montana while working railroad. Had a co-worker nicknamed. "Snakebite" that caught one and cooked for us. It was quite good
