Fridays Dinner with new lump charcoal

Seasoned up a couple Tri-Tips for the Scottsdale.

Trying a mix of fogo lump charcoal mixed in with some Oak Wood on these ones. Never tried this lump charcoal so lets see, and usually do Tri-Tips with straight wood, no charcoal.

Turned out pretty good, nice flavor with Oak and lighter charcoal taste mixed in. Should make for good Tri-Tip sandwiches tomorrow as well.

Each brand of lump charcoal has subtle differences. A good example is mesquite lump... flavor wood chunks of mesquite are too strong for my tastes, but mesquite charcoal is a really good fit with beef.
