Hi my name is Frema and i am a seventy year old grandmother that just decided to open a smokehouse restaurant in upstate ny. We just purchased an ole hickory smoker and we are planning to open mid june. I have no experience and i am a little scared. All equip is in and now we are looking for good help. Now the one thing i need is a small top loading proofer to store ribs near the cutting board. Any ideas
