I bought a couple of corned beef points on clearance. My question is how do I freeze them? Just put in the freezer brine and all or open them then vacuum seal then freeze? Seems odd to freeze with all that liquid.

I freeze two every year as is and take them out months later with no issues!

I buy a dozen or so per year about this time. I just Huck them in the deep freeze and never give it a thought. I've yet to have a problem.

I have froze many and they come alive quite well after a freeze. My only suggestion is if they are not vacuum packed (I had one) you will want to vacuum pack it. I froze one many years ago in a regular freezer bag and after cooking it was absolutely horrible. The Vac sealed briskets were fine. I just found one nearly two years old we had on St. Patty's day, and it was fine.
