I have a 6lb pork butt that's been on for over 8 hrs now. It stalled at 161 for about hour then slowly climbed to around 171 and stayed there for about two hours. I decided to mop it then realized I forgot to foil it at 165. Once I realized my error I immediately wrapped it in foil. About 30 minutes later the temp has dropped two degrees but my smoker has been a constant 220. Not sure what's going on and what I should do. Still pull it at 190 of it ever gets there?

Disregard, temps started to climb again and now up to 185. Thought I screwed up. All is well!

I don't even wrap my butts anymore, but I smoke them at 270-280.
They get done quicker & usually don't have a stall at all.
Just as tender & juicy as 225.

The drop in temp was probably due to it being off the smoker while you foiled. Hope it turned out well.
