Football Sunday dinner and buckboard bacon

Have not posted in awhile ! This past Sunday I had buck baord bacon to smoke that had cured for 12 days ! Had two 3lb deli hams in the freezer so got them out to throw in the smoker with the bacon . Did two types of bacon one coated in brown sugar the other coated with coarse black pepper . Deli hams were coated with honey and brown sugar. I put the deli hams on the bottom so they didn’t drip on the bacon. As for dinner I love hot ham and Swiss on fresh homemade bagels . So bagel baking began , took one ham out of smoker and baked a half hour in the oven for dinner. Bacon was all sliced and packaged on Monday . Monday dinner was a peppered bacon sandwich on a toasted bagel . Thanks for taking a look!

That is a busy day.
Outstanding buck board. What cut? I tried once and results were not pretty.
Love your bagels. Almost a bun with the hole mostly filled in. Closed I come to making bagels is wrapping around hot dogs.

I love making bagels, and also buckboard bacon... but I didn't connect the two together until your post! Oh dang I can't wait to try this!

P.s. here was my cooking today, sourdough rolls for some weisswurst I made, and I rotated 3 coppa/fat caps of buckboard bacon curing, smoking tomorrow!

Man that’s a lot of work but the finished product looks awesome! Thanks for sharing and all the photos sent me down a rabbit trail of making buckboard bacon never heard of it before

That all looks wonderful! Loved all the pics! I had a terrible case of the munchies Sunday so glad I wasn't there...bet your kitchen smelled like heaven!

That is sure a lot of work for a sammie. But it looks like it was well worth the effort. Those bagels look outstanding, as does the BBB. Nicely done!!
