I used Sweet Baby Ray's sauce for the first time. I'd heard so much about it from all the nor'easterners. I thought it would be good on the side, but it was a bit thicker than I like as a glaze.
Great looking ribs DDBBQ. If you liked the overall taste of the sauce maybe you could cut it with some Apple Juice or something similiar. I like all kinds of different fruit juices.

I like to use Sweet Baby Ray's now and again. If you find it a bit thick you could always thin it with a couple of ounces (or to taste ) of some fine Kentucky or Tennessee sipping whisky! Nice looking ribs, BTW!!
caramelization requires heat, sugar and fat put them togetherin the correct proportion and you will caramelize. I think what you are referring to is the bark. It is caused by sugars burning on the meat during smoking. It is considered a delicacy in my home.
That caramelization gives your tastebuds that little zing in your throat about 4 inches back from your chin, right above the adams apple, ya know what I’m saying?
