Saw this advertised on George's Market's facebook page. Decided to see if I could make the bread.

Made this one today:
Pretty easy but it does take at least two days to make.to make Italian sandwiches. Will see tomorrow if I can make a good Italian sandwich.

Damn, now I want focaccia! Well done.

When my Grandmother did Italian sandwiches, she always did the dough in two layers. Both done up like a normal thinner focaccia and then layered on top of one another. The bread would naturally divide due to the olive oil on bottom layer. One giant sandwich and you cut what you wanted.

Now take it with a grain of salt, she was German (Mom Italian) probably looking for a more efficient way to ;)

Looks great. For sure I'd eat that.

Coincidentally, I was looking at

Schiacciata Bread Recipe

only yesterday as a better alternative for sandwiches. Ideally using starter discard but....whatever.

Compare the end product and see what you think.

To cold to run to the store to buy deli meat (0°F) so what ever I had in the fridge went into making the sandwitch. Actually had some store bought sliced smoked cheese and sliced provolone that set this sandwitch off to a good start.
Added what ever meat I had in the fridge.
Found the sandwitch very filling and the bread more like a sour dough bread.
