I've been smoking meat for several years now. On my second Braun smoker,the first one got gone during a divorce. I cooked for a few years with a team but not now. Mostly pork but an occasional brisket and turkey or chicken/whole and quarters. Mostly use oak from local sources with citrus when I can find it. Throw together my own rubs and use family to experiment with.
