Fleischmanns Yeast Problems - Solved

I have a tried-and-true recipe for the bread my wife feeds to the sparrows in the winter.
I've been using this recipe for at least a year or more, and have no problems. (I use a bread machine)

However, the past 6 loaves have not risen as much as usual.
I haven't changed anything at all.
I do everything by weight, so measurement error isn't the problem.
Yes, I did a sanity check on the scale, and it's right on the money.

I did a little research on the InnerWebz, and I see other people complaining about the same thing.
They also used Fleischmanns.

I went up to Walmart and got a jar of Red Star that has a date of Oct 2026 on it.
I have a loaf in the works as I type this.

So... has anybody had any issues with Fleischmanns lately??
 
Strange... We have not. we have a jar we opened maybe a month ago and it working like normal.

Yeast seems kinda hard to kill IMO. Random thought - could it be the water?
 
Same water, ran through a Brita filter.

I had used Kroger AP flour in the past, and tried Gold Medal AP.
No difference.
 
I built a bake lab for AB Mauri several years back . They own Fleischmann's yeast .

I did have some that went out of date that did not " proof " . I'm not using a bread machine , so I add it to warm water first to make sure it's alive .
I've heard that you should use Instant yeast in bread makers , instead of active dry . Not sure what you have , or if it makes a difference .

I've also have had the salt affect the yeast , and slow or stop the rise .

This is active dry yeast, but that's what I've always used.
And I don't use salt since it's for the birdies, and only 1/2 teaspoon of sugar.
36 grams of sunflower oil, 260 grams of water and 475 grams of flour.
I put 1 teaspoon of yeast in last, on top of the flour.
 
Order looks right to me . If the Red star doesn't work , I'd make sure the heater is working .
Are you using a bread function , or the dough cycle ?
 
I'm using the bread function.

If this loaf using the Red Star has the same problems, then it's the machine.
I'm keeping a very close eye on the machine.
As fate would have it, I can return it until Saturday.

Man, there are so many times I wish I had one of the
temperature loggers like I used at work.
