My wife and kids loves these. I marinade a flank steak for about 24 hours with OJ, white vinegar, chopped garlic, cilantro, salt, and some lime juice. Throw it in the hot side of my Weber to seat it, then move it to the cold side and cook to about 138, let it rest and then chip it up. We serve it with some homemade pick my wife makes. And it turns out to be a pretty easy meal. We use Monterey Jack cheese shredded and whatever toppings you want to add. I’ll post the marinade recipe once I get a chance. But any taco fans should give it a try. Once the meet is chopped I usually squeeze the juice if half a like and mix it in. Enough talk though. Here are some pics.
