I am in a similar situation. I have a 23lb bird I am going to do this year. I have an MES30. I have been fretting about the best way to do it. With some help from the other members here I have come up with a plan. I plan on Spatchcocking the bird (cutting in half completely if it wont fit...) after I take it out of the brine, and treating it like 2, 11lb birds. With the sections halved, it should cook quickly enough to get out of the danger zone in time.
