First try at Pork Belly Burnt Ends

After finally getting lucky and scoring a reasonably priced belly, I get to try making burnt ends with it.

Went big on the cubes (1.5" or so), some rub, and onto the cooling racks (whomever mentioned this is genius - best $15 I spent on a grill accessory).

On the pellet grill (apple wood) at 250 with the smoke tube for a few hours... More to follow as things progress.

So-so bark, the pellet tube didn't burn well. (Self - inflicted: filled it last night but it rained - enough humidity to retard the burn. It's Arizona - we don't think of these things!)

But hitting 165/170, so piled into a pan with local wildflower honey, brown sugar and couple sticks of butter.

Back on for couple more hours

I just had to try these after Preacher Man posted his.
They were a huge hit at the Christmas Eve Party at the Daughter and SIL's house.
The DIL had 3-4 helpings herself. And she's a hardbody. So she really watches what she eats.
You will really enjoy these!
I served mine in a crock pot on warm.

Fantastic. Ya know, I'm surprised Pork Bellies don't get the recognition they deserve. You'd think they would be easy to get at any food store but they seem to be quite elusive. I wonder why? They are truly the hidden Gem and so versatile. I mean, Bacon, Pork Roast, burnt ends, fried skin (aka Cracklins is what we call em).

I bet they will be a big hit for anyone that hasn't had em before. Good job, they look delicious!
