I'm using the Mortons recipe for pepperoni. I got to try out my grizzly stuffer for the first time today. It is only my second time doing any kind of sausage. They will go in the smoker tomorrow.

  I like Squirt as well but it's hard to come by around here... Are you gonna throw the snack mix in the smoker too?

I hadn't thought about putting the snack mix in there. I'll have to look at doing that next time.
 
Here it is. I'm a little dissapointed. Pretty flavorless. Should I let it sit as a mixture over night before stuffing?
 
Looks good but you can do all thef mixing,stuffing,smoking all the same day I think you just need to play with it that is what is so fun about this!!! you get to eat your mistakes,LOL anyways figure out what is was missing and add it to the next batch     how was the texture?? smoke flavor there??

I have one Mortons recipe that takes 4 days of mixing before smoking??????

but most of all what did the recipe call for?? someone will be along to help that knows more than I

The texture was good, plenty of smoke, just not much of the pepperoni taste.it has hints of the pepperoni taste just not strong enough. I wonder if I put the anise seed, fennel seed and mustard seed in the grinder first.
 
A good option is to do a fry test after you mix. Make a small patty fry it up. Add more spice to your mix if needed then stuff!
