Did my first Tri Tip Sunday

Almost 3lb Tri Tip

Trimmed, rubbed with Olive Oil and coated in Montreal Steak Seasoning

Put on WSM using Hickory wood chunks. Had the WSM at 230 and cooked to IT of 110ish

Reverse Seared on the Weber Genesis at 500deg until a IT of 135

Came out very well, reminded me of Flat iron steak

1. I realized I failed on cutting

2. I was expecting it to be in the WSM for 2ish hours ... it smoked in 30-45 minutes. Is that normal? As seen in my Fireboard screenshot, my average smoker temp was 230
 
I would have thought 2 hours as well but you know the old saying, it's done when it says it's done !!! Yea kinda similar to hangar and flatiron, all three of which I love !!! Your's looks perfectly cooked to me, that's all that really matter right ? LIKE

And your right you did slice it wrong, gotta slice it against the grain.
