First Time Sausage -Live and Learn

Not sure what recipe you used but here is my old family recipe. You will have to break it down to size for what you are doing .

For 25 lbs. ground pork

3 oz. black pepper

7 oz. salt

1 oz. sage

Great job and a GREAT save... If you don't already have one.. A vacuum sealer is going to be your next investment... I will make up my patties and freeze them first before vacuum sealing them... That way it doesn't mash them all together when vacuuming ... then put how ever many you'll eat at one time into a bag and seal it up...

I was wondering at the beginning of reading when I saw 4.5 butt and you got 8# of sausage...you had my wheels turning on how that could be possible....then I see what happened. Good you could fix your mistake.

Now that's Yankee ingenuity right there I tell ya. Pretending to goof up the seasoning ratios so the wife can come to the rescue and correct your math. Then you get to enjoy double of what she originally agreed to. Either that or we'll blame your math skills on public education.

That sausage looks real good from my screen Justin.

I made my first batch of breakfast sausage. It started with a 4.5lb boneless butt roast. Ended up with just over 8lbs of pork sausage. Live and learn.
Recently I was gifted an electric meat grinder/stuffer from @smokin peachey and I was dying to make some homemade sausage. So, yesterday was the day to make breakfast sausage patties. Wife picked up a boneless pork butt 4lber. Not to big. And choose @pops6927 sausage recipe: salt, pepper and sage. Simple enough. Did my meat to spices ratio. Double checked myself on the ratio. Seemed right. Well, I was waaaayyyy off on the ratio. Mixed enough spices together to make 8lb of sausage!!!! Only reason I found out is when I sampled a piece. It was like I poured Morton salt in my mouth. Had the wife look at my ratio, and sure enough I screwed up!! Wife ended up going back to the grocery store and buying 4lbs of ground pork so I could mix into my sausage I just made. Fried a small piece.....much, much better. I like the taste.
I believed I saved this one. Live and learn. Now I have 8lbs of breakfast sausage in the freezer!
