Hey everyone!!

Hope the New Year is treating everyone well!!

So a little about myself and my equip.. lol who I’m kidding, it’s a cheap $100 electric unit I got for Xmas last year...

I’m from the mid Atlantic region, been smoking meat for a little over a year with a little electric unit that has a small chip box in the bottom.. that little bastard has turned out some damn good pork, brisket, melted cheese, and chicken..

I dabbled in an offset about 15 years ago, but was not nearly as aware of the white smoke problem and wet wood problem, so the meat had a significant taste of numbing tannins that didn’t turn me off completely, just drastically reduced my interest..

I’m very interested in getting going again with an offset and wish I would’ve held onto the one I previously had access too.. lesson learned..

Anyways.. I’m rambling..

Glad to be apart of the forums and will post what I got going on next weekend!! Doing a couple pork butts for 20ish people for the 49ers game..
 
Welcome! Nothing wrong with a modest smoker, I did some decent (at the time) bbq with a real tiny little garage sale 5$ grill thing. Looking forward to the thread

Hell yea!! My two exact teams too!

I’m not sure, what kind of offset exactly.. I have thought about just a cheap Amazon one to get back into the flow (pun intended) of things before I spend several hundred on one..

I also have grandiose plans of getting a big azz 250 gallon bubba grills reverse flow smoker trailer and starting a BBQ side business.. lol

Yep, when it comes to offsets there's a wide variety and price range to choose from, that's for sure. Where are you located, weather has quite a effect when using a offset smoker. I'll be doing either a butt or rack on my SQ36 tomorrow while we watch the Eagles-Seahags game and root for injuries. I moved to AZ a half year ago and love it here, I'll go see Madison during spring training now that he's a local boy too.

I’m located in southern Maryland, so weather is pretty consistently four seasons.. doesn’t get overly cold in winter, but can be into 20’s in a cold spell. Sunmers can occasionally touch triple digits, but huge humidity levels from May-Sept.

Welcome from Ohio. You might take a look at an Old World Pecos offset. Seem to be pretty good for the money.

I’m sure anything I get outside of a significant investment(read many thousands of dollars) would need some fine tuning, I.e. high temp sealant, additional thermometers, door gaskets and the like.

I’m guessing one of the main differences between the cheap $100-$150 ones on Amazon and the $300-$400 range is the building metal, would that be correct? Obviously other differences, weld quality (if at all on the cheap ones) hinge quality, and thermometer quality from the get go.

So to add additional thermometer(s), I would need to drill a hole into the door and then re seal/weld that, correct?

No! Get a ThermoPro TP20 with dual remote probes. You'll be able to monitor the temp of your cooking chamber and the IT of the meat simultaneously while sitting on your couch watching the ballgame and quaffing a barely pop. RAY
