Just started the pork belly cure process in brine solution (pops6297) recipe but I have one question I can't seem to find in my searches. I have them and the brine in a 5 gallon pail. can I layer the sections of pork belly on top of each other as long as all are under the brine solution? as in is it safe to have them touching or laying on top of one another or will this prevent even contact with the solution. I have 4 layers on top of each other with milk jug filled with water holding them all down below the surface was was unsure if the layering is ok or not.
the sections of belly are not perfectly flat so solution will be between in a lot of area but not everywhere.

Every 12 if possible, every 24 hours for sure, swap them around so everybody gets good contact...JJ
