So i wanted to try to smoke some back ribs for the first time. iv tryed to slow cook them before on a gas grill, they were edible but i felt i could do much better on my new MES30. So i went down to Costco after work and got 3 racks of back ribs in a vacume pack.

i washed them down and used a rub i found on here from Mnola917 adn let them set over night. i took off work a little early the next day becuse the excitment was killing me and i just had to get home and cook these puppys up.

I used a modified version of the 2-2-1 method because i like a little more bite to my meat, so it ended being more like 2-1.4-.30 with the last 30 mins on the gas grill on high with a liberal brushing of Sweet baby rays

Mnola917

3/8 cup Paprika
3 TBSP Brown Sugar
3/8 Cup Dry Mustard Powder
1 1/2 TSP Garlic Powder
1 1/2 TSP Celery Seed
1 1/2 TSP Sea Salt or Non-Iodized Salt
1 1/2 TSP Ground Thyme
1 1/2 TSP Ground Marjoram
1 1/2 TSP Coriander
3/4 TSP Cayenne
2 Cups Cane Sugar, or Granulated Sugar
1/2 Cup Seasoned Salt
1 TSP Ground Allspice
1/2 TSP Ground Ginger
1/4 TSP Ground Cloves

It makes about 3.5 cups. If you want a spicy variation (which I highly recommend) you can add:

2 TBSP Black Pepper
1 TBSP Cayenne
1 TBSP Dried Jalapeno Powder

Oosickness, WELCOME!  No one ever said those So. Cali boys couldn't do some great Q and you certainly proved it with those.  Nothing wrong with those.
