First smoked Prime rib turned out great, prolly could have been a bit rarer. Finished in the oven cause the wife likes it crisp. I was a bit conserned after 3 hrs smoking because there was not much drippings and didn't have the dark color I've seen others achieve. It was a 10# boneless roast. Used a home built stick burner with PID fan controls at 230.
