Here’s my first cappicolo. Nice and fuzzy with the good stuff. I figure I’m maybe halfway through, though I haven’t weighed it yet.

Can’t wait to try it. Used the recipe from the Ruhlman book. Curing in a box (to maintain humidity) in my beer fridge.

Smells good.

Nice. I've got two hanging, one of which should be ready to eat in two weeks or so. Hope it doesn't suck. :emoji_laughing: Let us know how yours turns out.
