Here’s my first cappicolo. Nice and fuzzy with the good stuff. I figure I’m maybe halfway through, though I haven’t weighed it yet.
Can’t wait to try it. Used the recipe from the Ruhlman book. Curing in a box (to maintain humidity) in my beer fridge.
Smells good.
